About Forks Over Knives: Forks Over Knives is a 2011 American documentary film directed by Lee Fulkerson, an independent filmmaker. The film examines the “profound claim that most, if not all, of the degenerative diseases that afflict us can be controlled, or even reversed, by rejecting our present menu of animal-based and processed foods.” The major storyline in the film traces the personal journeys of a pair of pioneering researchers, Dr. T. Colin Campbell and Dr. Caldwell Esselstyn.

The filmmakers travel with Drs. Campbell and Esselstyn on their separate but similar paths, from their childhood farms where they both produced “nature’s perfect food,” to China and Cleveland, where they explored ideas that challenged the established thinking and shook their own core beliefs.

The idea of food as medicine is put to the test. Throughout the film, cameras follow “reality patients” who have chronic conditions from heart disease to diabetes. Doctors teach these patients how to adopt a whole foods plant-based diet as the primary approach to treat their ailments – while the challenges and triumphs of their journeys are revealed.

FORKS OVER KNIVES utilizes state of the art 3-D graphics and rare archival footage. The film features leading experts on health, examines the question “why we don’t know,” and tackles the issue of diet and disease in a way that will have people talking for years.

FORKS OVER KNIVES was filmed all over the United States, Canada and China.

* Whole Food is KEY
* Eating with the SEASONS with a raw emphasis
* Balancing life with LIFESTYLE
* Being HAPPY
* Living your DREAMS

About Cindy Dreger: She has been “into” health food for 30 years, owning an Organic Food Delivery service for several years in the Cowichan Valley, advocating wheat grass juice while being a vendor at the Duncan Farmers Market selling alternative baking and Market Garden Fair when her kids were young. Cindy was the main buyer at the “Community Farm Store” at the Duncan Garage from when it opened till this past July. Having been a commercial Certified Organic Grower for several years has also given her a deep appreciation of Local Food Production and the need to advocate for food security and local producers!

Cindy studied to be a holistic health counsellor with Integrative Nutrition based out of New York. She has always believed “Food is Medicine” and teaches workshops using this theme to empower people to take charge of their Health with food and Lifestyle.

Cindy has been a part time yoga teacher for 10 years, living with an “everything in moderation” philosophy, knowing that fanaticism can be unhealthy. But now, moving into her 50th year, she values raw food more than ever.

About Ingredients Health Food & Apple Cafe : Ingredients Health Food & Apple Cafe is an alternative health food store and cafe with extensive organic bulk food owned located at 2031 Store Street (just n0rth of Capital Iron). It is owned and managed by Cindy Dreger and her long time friend and now business partner Deanna Danychuk.

Products will be organic and locally sourced as much as possible, with many gluten-free raw options available. Cindy and Deanna chose the name ingredients “because you can come in and buy the building blocks to create a healthy life”. Package reduction is a key theme. Customers will be encouraged to bring their own container for bulk items and containers and reusable bags will be for sale.
